Ingredients for the braised beef with wild mushrooms

1 beef round
400 g frozen boletus mushrooms, chopped
2 onions
2 carrots
4 garlic cloves
1 bay leaf
Whole black peppercorns
150 ml rancio wine (or dry sherry as an alternative)
Beef stock
Salt
Olive oil

Step-by-step to make the braised beef with wild mushrooms

  1. Start by tying the beef round with kitchen string. Season it with salt and pepper, then sear it in a casserole with olive oil over high heat.
  2. Once nicely browned, add the chopped vegetables, bay leaf, and peppercorns. Cook everything together over medium heat.
  3. When the vegetables are soft, add the rancio wine.
  4. Once the alcohol has evaporated, pour in enough beef stock to cover half of the meat. Cover and simmer gently.
  5. After about 15 minutes, turn the beef round. Repeat this process occasionally until the meat becomes tender. Remove it from the pot and let it cool.
  6. Meanwhile, strain the remaining contents of the pot through a fine chinois, blending lightly with an immersion blender 3 times through the sieve without fully pureeing.
  7. Once the beef has cooled, remove the string and slice it into 0.5 cm thick slices. Arrange them in a pot and pour the strained sauce on top.
  8. In a separate pan, sauté the previously defrosted boletus mushrooms over high heat.
  9. Add the mushrooms to the pot with the beef and simmer covered for another 5 minutes over very low heat.
  10. The dish is ready to serve. Enjoy your meal!
