Ingredients for the gnocchi with porcini mushroom sauce

500 g gnocchi
400 g frozen porcini mushrooms (chopped)
100 g frozen porcini mushrooms (chopped, for garnish)
1 onion
500 ml cream
Salt
Pepper
Brandy
80 g grated Parmesan cheese
Olive oil

Step-by-step to make the gnocchi with porcini mushroom sauce

  1. Start by finely chopping the onion and sautéing it in a pan with a bit of oil.
  2. Then, sauté the chopped porcini mushrooms over high heat.
  3. Add the sautéed onion to the mushrooms, pour in the brandy, and flambé everything together.
  4. Once the alcohol has evaporated, add the cream and let it simmer for 2 minutes. Blend the mixture until smooth.
  5. If necessary, let the sauce reduce slightly and season with salt.
  6. In the meantime, cook the gnocchi in plenty of boiling salted water.
  7. While the gnocchi are cooking, sauté the reserved porcini mushrooms in olive oil.
  8. For plating, spread the mushroom sauce on the bottom of the plate, arrange the gnocchi nicely on top, add the sautéed mushrooms, and finish with grated Parmesan. Enjoy your meal!'
