Ingredients for the omelette with truffle

8 eggs
35 g black truffle
1 large tablespoon of duck fat
1 pinch of dried thyme
Salt
Pepper

Step-by-step to make the omelette with truffle

  1. Cut the truffle into small slices with a knife and place in a bowl.
  2. Break the whole eggs into the same bowl, then beat well.
  3. Season to taste and add the thyme. Leave the mixture to stand for 30 minutes at room temperature.
  4. Heat the duck fat in a frying pan and when it has melted, add the eggs with the truffle. Let it cook as you like the texture of the omelette.
