Puff pastry ½ sheet
Brie cheese 60g
Romesco sauce 40g
Spring garlic 8 units
Fresh truffle to taste
Black truffle oil
salt and pepper

Step-by-step to make the puff pastry coca with black truffle, brie cheese, tender garlic and romesco

  1. First, cut the puff pastry, prick it with a fork, and bake it at 180°C (350°F) for 6–10 minutes depending on your oven.
  2. Once the base is baked, spread the romesco sauce over it, place the brie cheese and spring garlic on top, and bake for another five minutes until gratinated.
  3. When everything is nicely gratinated, remove from the oven and garnish with some microgreens and thin slices of fresh truffle to your liking.
