Sweet potato montaditos with truffle breakings & cheese


  • 1 clean sweet potato with its skin
  • 200g natural grated tomato
  • Salt
  • 50g Truffle breakings
  • Slices of Grana Padano
  • Chopped parsley
  1. Cook the tomato with a little salt until it reduces.
  2. Blend it until you achieve a fine consistency and put it to one side.
  3. Cut the sweet potato into thin slices.
  4. Put some tomato on top of the sweet potato and bake for 20 minutes at 200ºC.
  5. Take it out of the oven, add a sprinkling of truffle breakings, sliced parmesan and finish with a little parsley.
