Considered the most select truffle in the world, the white truffle (Tuber Magnatum) owes its prestige to its scarce and short season of availability, as well as its incredible and spectacular aroma. The white truffle grows wild from the end of September to the end of December.
This variety of magnatum truffle basically grows mainly in central and eastern European countries such as Italy, Croatia, Kosovo or Bulgaria among others.

Much of the white truffle harvesting around the world is done in Italy. It is there that it proliferates naturally in the forests of the Piedmont region, where it is considered to originate. However, during the last years the origin of this truffle can be found in several Eastern European countries.
The white truffle starts to grow in September, but its ripening point is not yet considered optimal for consumption. As it is such an exceptional and unique product, it is advisable to wait for its optimum moment to enjoy its aroma and flavour.
This optimum ripening moment comes with the cold. The sooner the cold arrives in the forests of the Italian Piedmont, the sooner we will be able to consume top quality white truffles. With a bit of luck, the first specimens appear in October.
As we get closer to winter, white truffles become more available and usually of better quality: if you want to consume fresh white truffles at their peak, the ideal months are November, December and, if the weather conditions are right, January.

The white truffle is a very exclusive product and its production depends largely on the climatic conditions in the places where it grows. For this reason, the price of the white truffle is very volatile and can vary greatly from season to season.
